Cheesy Potato Casserole

I love writing up recipes and discovering something new! Today I found this one and it is a hands down winner for a side dish. I often times want to make potatoes with dinner but get stumped when I want to add flavor to it without doing gravy. Sometimes gravy just doesn't pair well with what we are having or I'm just not in the mood for gravy. This recipe is perfect and all I can think of now is adding it as our potato side dish for Thanksgiving! I know it's a tad early but writing it out I will have it saved for the holidays 😉

Cheesy Bacon Potato Casserole by Shannon Blair

2. Cook, drain, and mash potatoes.
3. While potatoes are cooking mix together 1 package Party Time Mixes Cheesy Bacon Dip Mix with sour cream. Mix well.
4. Combine mashed potatoes, half the Cheesy Bacon mix and have the shredded cheese.
5. Mix potatoes together well, if they are too thick, add milk to reach desired consistency.
6. Pour potato mixture into a greased 9x13 baking dish, top with more shredded cheese (leave some for garnish).
7. Bake about 20 minutes or until cheese is bubbly and edges are golden brown.

Cotton Candy Cupcakes

I have a little over two months until my daughter turns 4 😱 I stumbled across this recipe today and it will be perfect for her! It also will be very easy to do so I might even leave off the frosting and let the kids do their own. I could even add food coloring to this but the colors might be a little off since the Cotton Candy dessert mix is a nice light pink color. Either way, even if I find its easier to frost myself, I know the kids will love these and as an added bonus, no cupcake wrappers left everywhere!

What flavors would you use? All the pink will be perfect in my house, and we love the Cotton Candy flavor, but chocolate cupcakes would be delicious too! Let me know in the comments

Southwest Jalapeno Chicken Pasta

It's been a long day and you need something easy for dinner, but what do you do? Run through the drive thru? But you don't want to spend money and you are tired of grease foods. Why not something simple made from stuff you more than likely already have at home? This recipe is so simple and requires minimal work, which is my favorite as a busy mom. The less time I have to spend in the kitchen, the happier I am, and if I can keep the dishes down to a minimum it's a total win! This will be on my menu very soon and I'm thinking I can even get my kids to try okra because, hey this is battered and fried. The best part of this really is that you could make it every week and make it totally different by choosing a different dip flavor.

Ice Cream Day

Happy National Ice Cream Day!

Yay I didn't miss it! I always seem to find out about these things at the very end of the day, but not today. Today I have enough time to partake in my favorite treat. Now to narrow down what kind I want. Go hit up one of my favorite ice cream places (Marble Slab) or make my own with this super easy recipe. I'm leaning towards making my own. How fun would this be to do with the kids in your life? I know my kids love when we turn the Cotton Candy Martini into a yummy milkshake, maybe we could do that as straight ice cream instead. Or maybe we should make Mudslide and put a delicious chocolate swirl through it!

No matter what is your favorite, I hope you enjoy a bit of Ice Cream today!

Easy 3 Ingredient No Churn Homemade Ice Cream
No special equipment is needed to make this ultra-creamy ice cream. Eat it plain or add some fun stir-ins.

Recipe:
One 14-ounce can sweetened condensed milk

2 cups heavy cream, cold
1 pkg Party Time Mixes Any Dessert Mix ( or 1/2 pkg any cocktail mix)

Instructions:
1. In a large bowl, combine condensed milk, heavy cream and mix.
2. Whip with a mixer on medium-high speed until firm peaks form, about 2 minutes.
3. Pour into a chilled 9-by-5-by-3-inch metal loaf pan, and freeze, covered, until thick and creamy, like soft-serve, about 2 hours.
4. Swirl in any desired mix-ins with a spoon.
5. Continue to freeze, covered, until solid and scoopable, about 3 hours more.
*Total freezing time is 5 to 6 hours.

Who here loves caramel?! Often times it isn't a flavor I reach for first, but I have to say, when I do indulge it's always worth it!
