As I impatiently wait for cooler weather, I have been thinking about what kinds of things to make for dinner when it is finally cool enough. I came across this one and it sounds amazing, although possibly heartburn inducing. But let's get real, being in my third trimester, everything gives me heartburn 😓 Since some of you are lucky enough to live in states that actually get Fall and Winter temps, here is an awesome dinner idea for you!

I could even share with my kids, if I was feeling generous, which I am NOT 😂 The wonderful Mikayla Jeppesen created this awesome recipe and she was even kind enough to make a how to video, if you want to check it out go to https://youtu.be/Pf8CBRhYdVw

Garlic Galore Stuffed Chicken

If you are wanting a new spin on chicken, check out this recipe! This one is way outside my taste comfort zone but it certainly looks delicious. I think I will be trying this when my hubby is back home! Probably won't stack up to that Italian cuisine he has been enjoying for a month but when I asked him where he really wanted to eat when he came back, he said at home! I might as well use that as a chance to try something brand new 😀

Garlic Galore Stuffed Chicken by Debra Garcia

Recipe:
6 boneless, skinless chicken breasts
Sliced Havarti (or mozzarella) cheese
Grape or thin slices roma tomatoes; sliced in half
Zucchini slices, sliced in half
Green or Red Peppers thin sliced in half
Prepared pesto sauce
1/2 package Party Time Mixes Garlic Galore Dip Mix
Salt and Pepper (optional)

Instructions:
1. Place the chicken breasts on a cutting board. Using a sharp knife, cut slits across the chicken breast about 3/4 of the way through being careful not to cut all the way through.
2. Depending on the size of your chicken breast, you're going to want around 3 to 4 slits per chicken breast.
3. Stuff each slit with a slice of mozzarella cheese, half a tomato, zucchini, pepper and drizzle with pesto sauce over each of the stuffed slits.
4. Place the chicken breasts in a baking dish
5. Sprinkle each breast with a generous amount of the Party Time Mix Garlic Galore mix, and a bit of salt and pepper if desired.
6. Bake in a preheated 400 degree oven for 30 minutes or until the internal temperature of the chicken reaches 160 degrees.
Serve with your choice of some rice with green peppers, or some pasta

Pizza Pizzazz Spaghetti

Spaghetti is a favorite around my house. If I make that I can almost guarantee that everyone will eat. I love this recipe. It so easy to do and delicious. Although I substitute meatballs for the ground beef because one of the kids only eats the meatballs and not the spaghetti 😂

Garlic Galore Chicken Salad

Looking for a lunch idea that is easy and safe to eat while I am pregnant is not always easy. I came across this one and its actually perfect because you cook the chicken as you need it. Or if you are lazy like me, just purchase a rotisserie chicken! I like those better anyways because the chicken is always juicier. It doesn't seem to matter what I do, if I prep a frozen chicken breast it comes out really dry. Do you have a favorite way to cook chicken at home?

Baked Pepper Jack Dip

Hooray it's finally September! Fall is so close I can almost feel it. I really hope Texas doesn't hold onto these awful Summer temperatures until December like it seemed last year. With the almost arrival of Fall, I can finally start thinking about all the deliciousness that comes with Fall. I have apple cider wax melts going and it will hopefully be cool enough to make this amazing warm dip. I know there are several parties in the up coming season I want to go to that a warm dip would be perfect to take along!
